Skimcoating, whether cement, gypsum, or lime based, all have one thing in common - the layer is very thin, from less than 1 mm, to 3 mm.  This means the exposed surface area is extremely large, per volume of product applied.  The rapid evaporation of water from this surface dictates that very high viscosity product must be used.  Also, since the product must also be smoothed very quickly, very easy workability is a huge benefit.  GinShiCel MH 512-AX is a great solution for this application.
